“Etivaz from the Alpage La Case is officially certified by Bio Suisse. And it has won Gold at the International Cheese Awards 2017 and a “Very Highly Commended“ at the Global Cheese Awards 2017.”

Certified organic

Swiss authorities ban he use of herbicides, pesticides and other chemicals on alpine meadows. Therefore, all Swiss alpine cheese production is basically organic.

At his chalet La Case in the Etivaz region, Claude-Alain Mottier has made the effort to have his cheese rigorously certified by the Swiss organic farmers association.

Revolutionary Cheese

Etivaz can be described as the original Gruyère: in the 1930’s, a collective of Gruyère-producing families in the canton of Vaud became frustrated with lax government regulations of the period, which they felt were allowing sub-par Gruyère’s to go to market and destroying the reputation of all Gruyère producers in the process. They decided to withdraw from the Gruyère program and created their own cheese, which they named L'Etivaz, after a village which was central to their region.

Like most of our cheeses, Etivaz is still made in copper vats over open wood fire, as it has been done for centuries. From the alpine chalets producing Etivaz, we have chosen La Case, because the cheese is distinguished by hints of wild flowers, but also because it comes with the renowned certified organic Bio Bud label and the Gold Medal at the International Cheese Awards. Etivaz is best served with a sparkling white wine or with a strong craft beer.
